Tofu, also known as bean curd, is an excellent source of calcium and protein. The great thing about tofu is that it absorbs all the flavors of the seasoning you use to cook it.
Mustard greens resemble that of a cabbage or kale, but with a distinct horseradish-mustard flavor.
I'm a Trader Joe's fan so I buy most of the ingredients at TJ's.
To make Broiled Tofu and Steamed Mustard Greens with Mango Sauce, you'll need:
2 16-oz. packages of extra-firm tofu, drained and patted dry
2 bunches of mustard greens, stems removed
1 Tbsp olive oil
½ cup TJ frozen bell pepper
½ cup diced onions
1 medium tomato, chopped
Prepare the mango mixture
Sautee’ onion and bell pepper until soft, stirring
occasionally. Cook 10-15 minutes.
Stir in mango chutney and tomato. Cover and simmer for
additional 5 minutes.
Broil the Tofu
Reheat oven to broil.
Coat baking sheet with oil or nonstick cooking spray.
Cut each tofu block in half, and then cut each tofu piece
into 4 triangles.
Brush each tofu triangle with mango mixture. Repeat on the
other side.
Season with salt and pepper
Broil for 5 minutes. Flip the triangle, brush with mango mixture.
Broil for 4 more minutes or until brown or crispy.
Cook Mustard Greens
Bring 1 cup water to a boil in a large pot
Add mustard greens, cover and steam for 5 minutes or until
greens are crisper-tender. Make sure greens cook evenly.
Serve mustard greens among serving plates. Top each serving
with 2 tofu triangles, and drizzle with ¼ cup mango sauce.
